Bulgogi

This is my absolute favorite way to eat chickpeas.  You can sprinkle them on a salad, or they make a wonderful side dish all by themselves.  They are an especially good accompaniment to mashed potatoes. 

Ingredients:

1 can chickpeas, drained and rinsed
1 tablespoon sesame oil
2 1/2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon sugar
1 tablespoon lemon juice
1 tablespoon orange juice
1/2 teaspoon garlic powder (or 1 clove chopped fresh garlic)

Instructions:

Place all ingredients in a non-stick frying pan.  Cook over medium heat, stirring occasionally, until the sauce has reduced to the point of being very little liquid and coats the chickpeas. Remove from heat and serve.
